Pudding chocolate chip cookies

Ingredients
  • 1 cup margarine (or butter) softened
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 3.4 oz pkg instant vanilla pudding mix
  • 2 eggs (at room temp)
  • 1 tsp vanilla
  • 2 1/4 cup flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup milk chocolate chips
  • 1 cup white chocolate chips (could substitute for more chocolate chips)
Instructions
Preheat oven to 350 degrees.
Add butter, sugars,  vanilla and egg until creamy and smooth. Then add all of the dry ingredients. When that is combined nicely add the best part, the chocolate chips.

Line baking with baking mat or some parchment paper and then spoon cookie dough onto the baking sheet. Bake for 8-10 minutes.
DON:T SPOON THEM!! I learned the hard way that the cookies don't spread out, they just puff up and with the extra thickness from the pudding, it needs 10-12 minutes. My first batch came out underdone completely and then even after an extra 3 minutes in the oven they were a little questionable.

So I took my second batch and flattened them before I cooked them for 10 minutes. They came out much nicer- cooked fully and tasted thick, but chewy. They were good the first day, but the second day they were kinda dry and the third day? forget it.

 

I just don't think I'll be doing it again. Still my favorite recipe that I've ever made is this one
