Starbuck's inspired coffee cake

(half recipe)

1 Box Yellow Cake Mix (plus ingredients on back of box)


Topping:
2 Sticks cold salted butter
2 1/4 Cups flour
1 1/2 Tablespoons cinnamon
1 ¾ Cups brown sugar
1 1/2 Tablespoons vanilla
Powdered sugar (for dusting)

PREHEAT oven to 350.

Mix together the cake mix  and place in a grease 9x13 pan. Cook for 15-20 minutes until just about done. (at 15 minutes mine was still shaky raw in the middle, so the full 20 it was).

 Yes, I wrote "Hi" in my batter- it was 6am and it made me laugh.

When you have about 10 minutes left in baking the cake, it's a good idea to make the crumb topping.


When the cake is done, immediately crumble topping onto it and let cool.


Verdict: I admit I was hesitant about making this. I was like, "It's going to taste like a cake" but alas I really needed to use my eggs before they expired. It really is good and taste authentic. The last time I made from scratch  coffee cake it was too dry, this was not!
